Tzatziki is a starter from South East Europe and the Middle East with 2 main ingredients; cucumber and yogurt. This is delicious to serve with crackers, carrot sticks or alongside a lamb kofta. You can serve it with whatever you like really!
Sometimes recipes can seem tricky or complicated but like many of our recipes, you don’t need a huge number of ingredients or cooking talent to make this impressive and refreshing dip.
Just a tip before you start – this is a large recipe so if there are only a couple of you, try only making a third.
1 cup cucumber (grated)
1 ½ cups natural yogurt
1 tsp minced garlic
2 tablespoons olive oil
1 tablespoon white vinegar
Salt to taste
Grate cucumber and drain through a sieve to remove any excess water. Blot with tissue paper or a clean tea towel to ensure all excess liquid is drained away.
Combine all ingredients in a bowl.
Cover and chill for an hour before serving.
