Cucumbers are plentiful in summer as is mint. We have combined the two to make a delicious mocktail that you can share with the whole family this summer. Be it for brunch or dinner, this mocktail is a winner for any time of the day. Here is the recipe:
½ handful of mint
1 x bottle of Chi
Handful of ice
Pitcher / jug
- Slice the cucumber sideways creating a large wedge. Put one of these in each glass and the remainder in a pitcher / jug.
- Roughly chop the mint so they’re halved and put in the pitcher
- Add a handful of ice
- Add chi to the top of the jug and use a large spoon to mix together. Leave for 5 minutes before serving
This is an absolutely simple recipe and utilises many ingredients that will already be in your kitchen. If you find the taste of Chi a little too strong, you can mix half and half with soda water. Make sure you have plenty of ice for those long summer days.
The Cucumber Cooler can be enjoyed with any meal you like but we think it would go especially well with a fish or chicken and salad.
