Recipe: Easy and Fast Eggplant Steaks

Eggplant is very much in season at the moment but sometimes it is hard to know how to cook an eggplant. Here is our easy recipe for eggplant steaks – a wonderful replacement for a dish with meat, these are filling and perfect served with your favourite salad.

1 x eggplant
¼ cup butter
1 cup breadcrumbs
¼ cup cheese
¼ tsp paprika
½ tsp crushed garlic
½ tsp Italian seasoning

Wash eggplant and slice in to 2 cm discs. Place in colander and sprinkle with salt, leave for at least an hour.
Melt butter and mix in crushed garlic and in a separate bowl mix together breadcrumbs, cheese and spices
Dip the eggplant slices in to butter then breadcrumb mix and put on a lined baking tray.
Bake at 200 degrees for 15 mins before flipping over and baking for a further 7 mins.
Serve with tzatziki or our couscous salad recipe and enjoy!

We prefer to make our own breadcrumbs with wholegrain bread, but this is up to you.
If you’re not a fan of paprika, substitute for your preferred spices
