I know with lockdown that heaps of you are probably tired of baking and cooking but if you have a feijoa tree in the garden, as I do, you may find you have heaps of fruit and are wondering what to do with them – aside from eating them fresh. Yum. I stewed lots and then popped them in to the freezer.
The following is a recipe I adapted to make use of the stewed fruit. This recipe is easy peasy, thus the name. You could also add fresh feijoas, it’s up to you. Nice warmed with Greek yogurt.
50g melted butter
1¼ cups stewed feijoas with syrup
¾ cup sugar
2 cups plain flour
2 teaspoons baking powder
1 teaspoon cinnamon
1 Tablespoon sugar
1 ½ teaspoon cinnamon
Preheat oven to 180 degrees and line a cake tin.
Melt the butter and add the feijoas. Mix together.
Add eggs one at a time before adding the sugar.
Fold in sifted flour, baking powder and cinnamon until just mixed
Pour the mixture in to a baking tin and make sure it is evenly distributed.
For the topping, mix the sugar and cinnamon together and sprinkle on top.
Bake for 30 minutes. Leave to cool and enjoy.
