Recipe: Making the Most of Your Custard Powder With Yo Yos

We have had some custard powder in the cupboard for a while now and used some of it in a delicious Egg Free Custard Cake. Here is another recipe to use your custard powder for. Yo Yos, an absolute classic. We made ours without the filling so perhaps these are just Yos… either way, these are a lovely light and buttery tea biscuit.

175g butter
1 tsp vanilla
1/3 cup icing sugar
1 ½ cups flour
3/4 tsp baking powder
½ cup custard powder

Preheat oven to 180 degrees and line a baking tray with baking paper. Or use a non-stick tray
Sift icing sugar and beat together with softened butter and vanilla essence until creamy. Use a hand mixer if you have one
Sift the flour, baking powder and custard and stir until combined.
Roll mixture in to small teaspoon full sized balls and place on the baking tray before pressing slightly with the back of a fork
Bake for 10-12 minutes and cool on a wire rack once done

These don’t expand too much, so you don’t need to leave a lot of space on the baking tray
Wet the back of the fork to avoid the biscuits sticking to the fork
Leave for a few minutes on the baking tray before moving to a wire rack as they can be quite delicate
