RECIPE: Spicy Chickpea, Cucumber and Bean Salad

We love chickpeas, they are high in protein and fibre and are a great staple to have in the kitchen. Why not try our Spicy Chickpea, Cucumber and Bean Salad. This is fast and easy and with delicious flavours, it’s easy to whip up at a pinch.

INGREDIENTS:
1 tablespoon olive oil
1 tablespoon minced garlic
1 teaspoon cumin
1 teaspoon chili powder
zest of 1 lemon (and juice to finish)
1 x can chickpeas (drained)
½ red chopped red onion
1/3 cucumber sliced length ways
1 cup frozen beans (or fresh)

METHOD
Chop cucumber in to 5 cm length flat slices and set aside
Mix together olive oil, garlic, cumin, chili powder and lemon zest.
Heat a pan and add olive oil mix, cooking for about 30 seconds
Add chickpeas and chopped red onion to the frying pan and mix together. Cook for 3-4 mins
Blanch frozen beans and drain
To assemble place the chickpeas on a plate and top with cucumber and beans
Squeeze lemon juice over the salad and enjoy

TIPS
This can be served warm or cold and as a side or a main depending on how hungry you are
Remove the chili powder if you don’t like spicy food
We used frozen beans as they’re what we had but fresh or frozen will work
Make ahead of time and take for a fast and healthy lunch
Recipe serves 2 and double or triple the recipe for larger groups
