RECIPE: Yam, Feta and Spinach Salad

One of the wonderful things about winter is it’s yam season! These tiny weird vegetables are finally in supply and at a reasonable price. Try this easy yam recipe. Like many of our recipes, ingredients can be substituted but we have listed what we do below. Enjoy!

700g yams
1 x bag spinach
1 x block cows feta
1/3 cup sunflower seeds
Tablespoon Olive Oil
Tablespoon honey
Salt and Pepper to taste

Preheat oven to 200 degrees and line a roasting dish
Wash yams and slice length ways in to evenly sized pieces
Add to the tray, toss with oil and honey and bake for 30 minutes turning over half way through
While baking, wash spinach and add to a serving dish
Chop feta in to pieces and dry fry the sunflower seeds
Once yams are cooked, grill for a further 3-5 minutes
Cook for a couple of minutes before adding yams to spinach and covering with feta and sunflower seeds

This salad can be served as a side or as a meat free alternative meal. You can substitute yams for kumara and sunflower seeds for pumpkin seeds – it’s up to you!
